Chicken Curry + Roti Jala


This was very backdated post, that i promise some mummy to post up the recipe for this …

Chicken Curry
3 tbsps oil
2 shallots , sliced thinly
3 cloves garlic
3cm ginger
2 pack chicken Curry Paste ( any brand )
1 kg chicken
1 stalk curry leaves
1 cup water
3 tomatos
3/4 cup think coconut milk

Roti Jala
1 tsp cooking oil
2 cup flour
1/2 tsp salt
1/4 tsp turmeric powder
1 1/2 cups water
1/2 cup think coconut milk
1 egg, lightly beaten

1. heat oil in a wok and stir fry shallots, garlic and ginger. Add chicken curry paste and stir-fry for 1 min.
2. Add chicken and curry leaves, cook for 3 mins then add water and tomato, bring to boil ,
simmer for 25 mins add coconut milk and boil. Turn off fire.
3. To make roti jala, sift flour, add salt and turmeric powder. Make a well in the centre of
the
mixture , add water, coconut milk and egg. Using a whisk , mix well to form a batter .
4. Heat a greased non-stick pan. Put 1 ladle of batter into roti jala container and move in
circles
over pan to form a lacy thin pancake. Cook until set, about 5 mins. Roll rach piece
and serve
with hot curry. ( Must used roti jala container , cost only RM1.50 , it’s need few
time practice to get a nice lacy
thin pancake).
